Cheese Scones with Marmite Bite

Preheat the oven to 220ºC.

Coat a baking sheet with cooking spray and set aside.

Sift the flour, salt, mustard powder and baking powder into a large mixing bowl.

Cut the butter into the dry mixture and rub in until the mixture resembles fine breadcrumbs.

Stir in the cheese.

Slightly heat the milk and Marmite together and mix well. Make a well in the centre of the flour mixture and pour in the milk mixture. Mix to form a dough.

Turn the dough out onto a lightly floured surface and knead until smooth. Roll out to a ±15mm thickness and using a 7,5cm or smaller, floured cutter, cut out the scones and place onto the prepared sheet. Space the scones 2,5cm apart.

Brush the top of each scone with milk and bake for 12-15 minutes or until a skewer inserted into the centre comes out clean.

Remove from the oven and turn out onto a wire rack to cool.

Serve warm with butter.

Makes 8 large or 12-15 smaller scones

375ml Sasko cake flour

pinch of salt

5ml mustard powder

20ml Moir’s Baking Powder

60g butter

100g grated Cheddar cheese

150ml milk

5ml Marmite

25ml milk, extra for brushing
