Cape Style Smoked Snoek Bites

Remove bones from fish and flake.

Mix the fish flakes with all the other ingredients except the parsley and dill(if used).

Place in fridge for 30 minutes. Remove from fridge and roll into even-sized, bite-sized balls.

Lastly roll in the chopped herbs.

Place in an airtight container and store in fridge until needed, but not longer than 3 days. The flavour of the snoek balls will develop over time.

Should you leave the balls in the fridge for more than one day, rather roll it in the fresh herbs just before serving.

500g smoked snoek

375ml grated Cheddar cheese

60g soft butter

60g cream or cottage cheese

50g Moir’s Yum Salted Biscuits

Crushed parsley, chopped, or a mixture of freshly chopped parsley and dill
